Prep time 10 minutes* - cooking time approx 20 minutes

*Marinate for 48 hours

 

Ingredients

 

250ml cook packKingsGardenRaspberry & Mint Blend

250 grams lean lamb/chicken diced in bite sized cubes

1 medium onion

2 medium carrots chopped into very small cubes

1 red pepper

1 yellow pepper

50 grams frozen garden peas – defrosted

50 grams frozen sweet corn - defrosted

200 gram long grained rice

 

Method

 

Place the meat and the Kings Garden Raspberry & Mint in a non steel container, seal with cling film and place in refrigerator to marinade for 48 hours.

Pour the meat and marinade into a large wok or frying pan, heat until marinade bubbles, stirring frequently then cover  and turn heat down to achieve a simmer.

Rinse rice well then add to 500 ml boiling water and cook until grains are just soft throughout, about 10 minutes, drain and stand to one side

Whilst the meat & rice are cooking:

Peel onion & peppers and chop into small pieces approx 15 mm.

Add carrots to meat after about 10 minutes of simmering and stir well, re-cover

After four or five minutes add peas & sweet corn stirring whilst adding, increase heat to a nice bubble

Allow about 3 minutes then remove from heat and drain off majority of liquid to leave a well oiled pan base.

Return to heat and add peppers, onion and rice, fry for approximately 3 or 4 minutes stirring frequently

 

Serve immediately; the meat should be tender, vegetables hot but firm and the taste subtle. The raspberry & mint taste will not overpower, the idea behind this dish is the essence of Kings Garden Gourmet Kitchen, subtle tastes presenting dishes in different ways
